Yummy salad recipes for a healthy and light diet

It is better to eat light and fresh food during the summer as it is good for the body.

Fruits and vegetables are easy to digest as they are full of nutrients and water.

They can be combined to make tasty salads that are also easy to put together.

Here are some fresh and exciting salad recipes to try this summer.

  1. Peel and cut some mangoes into small pieces. Put in a bowl and add half a cucumber chopped into small pieces, a dash of olive oil, salt and pepper. Finally add some chopped dhania or coriander leaves and a squeeze of lemon. Keep it in a fridge for some time and enjoy when it is cold.

  2. The second recipe is also a mix of fruits and vegetables. Slice two tomatoes and a cucumber. Add a few chopped pieces of watermelon and banana. Take a slice of bread, toast it and add it into the salad. Finally add some grated ginger, lemon juice and salt for a sweet and sour flavour.

  3. Take a cup of cooked white rice. Add two tablespoons of chopped spring onions, one grated carrot, one grated cucumber, fresh chopped dhania/ coriander leaves. Squeeze two tablespoons of lemon juice, two tablespoons of olive oil and mix well. Now add black pepper and salt to taste. Finally sprinkle some roasted peanuts for crunch.
