Turmeric or haldi is an integral part of Indian households.
The yellow powder adds color and flavor to the food and is also known to have several medicinal benefits.
However, there is a little confusion when it comes to getting the maximum benefits of haldi.
Some experts state that the cooking process destroys the health benefits of the spice.
When food with haldi is cooked at very high temperatures it can affect the quality of the spice.
A research has been conducted by the Department of Biochemistry and Nutrition, Central Food Technological Research Institute in Mysuru.
The study found that boiling and pressure cooking turmeric for long durations, may lead to a loss of curcumin compound of turmeric.
The study observed the effects of three cooking process on haldi. This was boiling for 10 minutes, boiling for 20 minutes, and pressure cooking for 10 minutes.
However, some experts state that cooking can enhance the benefits of haldi.
According to them, cooked turmeric is more beneficial than raw haldi.
